It’s National Pistachio Day and I love Pistachio so making Kheer is my favourite way to observe the day.
Ingredient

Preparation time-30mins, Cooking time-25 mins
Cooking instructions
* Step 1
Soak rice after good wash for 30 mins, strain the water and make a paste in a blender with 3 Tbsp milk. Set aside
* Step 2
Take pistachio and soak in water for 10 mins and add to the blender to make a paste with water
* Step 3
In a heavy bottomed pan heat milk and add the rice paste and keep stirring so that there is no lump. This should be on low flame
* Step 4
When the Kheer is little thick, add the pistachio paste and keep stirring. At this time you can add green colour which I omitted.
* Step 5
Add sugar at this time and keep stirring until sugar melts
* Step 7
Plate and garnish with chopped pistachios
