Spiced Vegetables with Coconut on Rice

This quick fix dinner gives the taste of vegetables alongside the richness of green and red chillies. On rice it tastes heavenly

Cooking instructions
* Step 1
Wash the rice and boil 2 cups water and add the rice. Cook in low flame. Chop the carrots diagonally. Chop the green and red chillies, chop the fennel bulb. Chop the garlic and the ginger
* Step 2
In a wok heat oil and add chillies, fennel, carrots, ginger, garlic and stir fry for 2 mins
* Step 3
Stir in the coconut milk and bring it to boil
* Step 4
Stir in the chopped coriander leaves and add salt, black pepper powder. Stir well.
* Step 5
Serve with rice and add coriander leaves on the sides
