Cooking instructions

* Step 1

Take a heavy bottom vessel pour in milk and boil stirring frequently.As it boils switch off the gas. Add vinegar till it curdles. Seive it and wash the chenna nicely. Now tie it in a muslin cloth,either hang it or put it under weight to remove it's excess water. Keep it for thirty minutes.

Now remove it from the muslin cloth and in a kneading plate mash it nicely with your palm till you get a smooth texture. Add in milk powder and sugar, mix again.Now take a non-stick pan, add this mixture and heat it for five to six minutes.Cool it,add in the mango essence.Keep aside

* Step 3

Take fresh mango, cut thin slices as shown in the pic then with the help of cookie cutter, cut them in squares. Keep aside now grease the cutter with oil from inside. Press in small amount of sandesh mix, press to give a shape. Carefully slip the mango piece and again put the sandesh mix

* Step 4

Now carefully demould it by pressing down the sandesh with one hand and with the other hand try to pull the cutter upwards like this it will take the cutter's shape.What a beauty!! An irresistible delicacy which you cannot stop eating.
