Kothimbir Vadi (coriander snack)

#mychildhoodrecipe A traditional maharashtrian snack usually prepared when there is lot of fresh coriander leaves available in the market. Mom used to prepare on holidays or festivals and it was like a treat for us. I have recreated her recipe with addition of peanut powder as I love its crunch in every bite.

Heat oil in a pan and add the curry leaves. Add the streamed Vadi slices and fry them. Flip and fry from both the sides. Alternately you can give tadka with mustard seeds or deep fry as per your choice.
