Kothimbir Vadi (coriander snack)

A traditional maharashtrian snack usually prepared when there is lot of fresh coriander leaves available in the market.
Mom used to prepare on holidays or festivals and it was like a treat for us.
I have recreated her recipe with addition of peanut powder as I love its crunch in every bite.
Ingredient

Cooking instructions
* Step 1
Make a paste of garlic and green chillies or use crushed
* Step 2
In a bowl, mix together coriander leaves, salt, turmeric powder and keep aside for 10 minutes.
This will help to release water.
* Step 3
Now add chickpea flour, ajwain seeds, hing and peanut powder. Add little water and mix together.
* Step 4
Now heat some water (2 glasses and keep a lemon slice in it to avoid the vessel from burning) in a deep pan or steaming vessel.
Grease a plate and keep ready.
* Step 5
Now grease your palms with few drops of oil.
Take some batter and roll out into oval shape.
* Step 6
Place them on the greased plate,cover and steam for 20 minutes on high flame.
You can check for the outer side. It becomes dry and dark in color so you know it is cooked well.
* Step 7
Take them out on a plate and let them cool down a bit.
Cut them in to slices.
* Step 8
Heat oil in a pan and add the curry leaves.
Add the streamed Vadi slices and fry them. Flip and fry from both the sides.
Alternately you can give tadka with mustard seeds or deep fry as per your choice.
