Penne Pasta with Chicken in Roasted Tomato Cheese Sauce

Penne Pasta with Chicken in Roasted Tomato Cheese Sauce

My step daughter loves cooking. She gravitates to every cookbook when we are out shopping. She came across this recipe and we have made it together several times already. Today I put my spin on it by adding some ingredients and omitting others. Hope you like my version.

Ingredient

Cooking time :

20 minutes
1 pound

penne pasta

6 ounces

fresh spinach

2 tablespoons

olive oil

1 tablespoon

tomato paste

1/2 teaspoon

anchovy paste

4 ounces

cream cheese

2 ounces

goat cheese

2 tablespoons

dried basil

1 tablespoon

dried oregano

1/2 teaspoon

cayenne pepper

1 teaspoon

salt

1/2 teaspoon

black pepper

Cooking instructions

* Step 1

Cook pasta according to package directions. Reserve 1 cup cooking water.

* Step 2

While pasta is cooking start sauce. I cooked up my chicken ahead of time then cut it into bite sized pieces. Lightly salted and peppered them then sauted in olive oil until cooked through. Then set aside.

In pan that I cooked chicken, I added the above amount of olive oil. I sauted the garlic over medium heat for 1 minutes before adding in the onion.

* Step 4

Stir and cook onions addition 2 minutes. Add in tomato and anchovy paste and mix to combine and cook additional 3 minutes constantly stirring.

* Step 5

Add in can of roasted tomatoes. Stir in spices. Once mixed stir in cheeses until they are thoroughly melted. Turn heat to medium low and cook for 10 minutes.

* Step 6

Add in chicken and spinach. Stir and set heat to low. Simmer a few minutes and add pasta with cup of reserved water.

Turn off heat and cover pot. Let pasta sit in pan a few minutes to absorb flavor then serve and enjoy!
