Baigan aloo in pickle gravy
Cooking instructions
* Step 1
Dry roast 1sp jeera,1sp saunf,1/2sp rai, kalonji,carom seeds and grind coarsely.
* Step 2
Crush ginger and garlic not too fine.
* Step 3
Wash baigan slit in the middle apply little salt and keep aside.peel potatoes and cut length wise.
* Step 4
Heat oil in a pan add baingan and potatoes and cook till soft.
* Step 5
Heat oil in pan add jeera,saunf,rai,red chillies add crushed ginger garlic and mix well add grind masala and mix it now add pureed tometoes and cook till oil seperates.
* Step 6
Now add chilli powder, coriander powder salt and sugar mix it add baigan and potatoes
* Step 7
Mix the baingan potatoes with gravy and sprinkle coriander leaves and serve with chapati or roti.
