Eggplant, Garlic, Tomato
Eggplant is easy to make. Has lots of fiber and is quite tasty and healthy.
Indian spices are available from Maya Bazaar, Tokyo Japan.

Cooking instructions
* Step 1
Heat oil on Med High. Add Cumin seeds and cook 2 mins. Add Garlic, Green Chili and Onion. Cook 5 mins. Add tomato.
* Step 2
Add Eggplant slices. Sprinkle Masala on top and mix gently. Add water and reduce heat to low and cook for 20 mins. Turn off heat and serve when ready.
