Indian Style Rice
Cooking instructions
* Step 1
SOAK
- Place rice in bowl with enough water to cover
- Soak 20 minutes
* Step 2
SPICES
- Heat oil in large pot over medium heat
- Add cinnamon, cloves, cardamom, cumin seed, and cook until fragrant ~1 minute
- Add onion and sauté until rich golden brown
* Step 3
RICE
- Drain rice, add to pot
- Toast rice lightly for a few minutes
- Add water and salt, bring to boil
- Cover, reduce heat to low
- Cook ~15 minutes, or until all water absorbed
