Ghalye meygoo

💯 northern Persia shrimps stew. The most famous food of northern provinces of Iran. Must be served with rice. #Persian_cook For those who need exact Persian name: قلیه میگو

Ingredient

Food ration :

4 servings

Cooking time :

90 mins
1/8 spoon

ginger powder

1/4 spoon

curry powder

5 cloves

garlic

1/2 pack

tamarind

2 cups

water

Cooking instructions

* Step 1

Grate onion and garlic.

Pan fry onion, garlic vegetables for 6 minutes with half of the oil.

Don't add salt till the end.

* Step 4

Mix well tamarind with water, then squeeze it well in water. Strain. We need the water, not the seeds.

* Step 5

Add tamarind water and fried vegetables into a pot and bring to boil. Let cook for an hour on low heat.

* Step 6

Pan fry shrimps with half of the oil until gets pink.

* Step 7

Add shrimps (and some boiling water, if needed) into the pot and let cook for half an hour on low heat.

* Step 8

Taste the salt at before serving.
