Sneaky Sloppy Joes
A medley of healthy veggies are mixed with lean ground beef and a homemade sauce. Served on a crusty roll with a little cheddar cheese, no one will suspect the vegetables!
Cooking instructions
* Step 1
Brown beef in a cast iron pan and drain.
* Step 2
Sauté onion and garlic in a little olive oil.
* Step 3
Add carrots and peppers to the pan and season with a little pepper and salt
* Step 4
Add zucchini and mushrooms
* Step 5
Once vegetables have softened slightly return beef to the pan.
* Step 6
In a mixing bowl add the remains ingredients and whisk together
* Step 7
Pour the sauce into the pan and lower the heat.
* Step 8
Simmer for about 15 minutes or until sauce thickens.
* Step 9
Scoop sloppy joe mixture onto a crusty roll and sprinkle with shredded cheddar cheese.
