Cheesey leek and potato bake

Cooking instructions
* Step 1
Peel and slice potatoes into quarters and boil for 25 mins or until tender
* Step 2
Peel and slice leeks and onion
* Step 3
Fry the leeks and onion in separate pans in a little vegetable oil until tender
* Step 4
Mash the potatoes in a large bowl with the milk then add the leeks, onion and cheese and mix well
* Step 5
Place bake into oven proof dish, sprinkle with cheese and bake for 20 mins
