Cooking instructions

* Step 1

Light the grill 1 hour before cooking

* Step 2

2 hours before, put lamb in large bowl.

* Step 3

add minced onion, pepper,oregano and oil and mix well, cover and refrigerate.

* Step 4

before cooking ,on metal skewers,alternate lamb cubes, onion, tomatoes, mushrooms and the peppers, leaving 1/4 inch between each piece.

* Step 5

brush vegetables with oil lightly,

* Step 6

then grill 5 inches above hot coals for 10 to 15 minutes, just until center of lamb is still a little pink. turn frequently.

* Step 7

brush all pieces with enough oil to keep moist while cooking.

* Step 8

using a fork, push shish kabob off skewer onto a serving dish.

* Step 9

serve over pilaf or rice.

* Step 10

Garnish w/ lemon wedges.
