Cooking instructions

* Step 1

Put first 8 ingredients in a large pot, roughly chopping the vegetables & boil for 1hour.

* Step 2

Remove & strain all vegetables. These veggies are no longer needed, they were just to make the veggie stock.

* Step 3

In separate pot boil noodles & set aside.

* Step 4

Chop up mushrooms & mustard green & cook in veggie broth.

* Step 5

Add noodles to bowl & ladle in broth with veggies & garnish with scallions

* Step 6

Eat & enjoy
