Elote Macaroni & Cheese

Cooking instructions

* Step 1

Preheat Oven to 375°. Bring a Large Pot of Water to Boil over High Heat. Add Pasta when Boiling.

* Step 2

Preheat a Deep Skillet over Medium Heat. Place the Unsalted Butter in the Skillet, and allow to Melt Completely. Add Flour while Whisking Constantly. Allow to Cook until it Starts smelling Nutty, and the Raw Flour is Cooked off (About 1 - 2 Minutes). Add the Corn. Stir for a Minute or so, then Add Cream. While the Cream Heats up, Stir occasionally.

* Step 3

Once Cream is Hot, Start adding Cheeses. Stir Well. Add Spices, and Stir Again. Once Mixed Thoroughly, turn Heat to Low.

* Step 4

In a 16" Casserole Dish, Add the Cooked Pasta. Pour Cheese Sauce over Noodles and Mix Well. Add an even Layer of Shredded Colby and Muenster over the Top. Put in the Oven and Cook for 20 - 30 Minutes, or until the Cheese is Browning on the Top. Take out of the Oven, and Top with more Cotija, Chili Lime Seasoning, and Cilantro. Serve and Enjoy!

CHILI LIME SEASONING: 1 Tbsp Chili Powder, 1 1/2 tsp Lime Powder, 1 1/2 tsp Paprika, 1/2 tsp Cayenne Pepper, 1/2 tsp Salt
