Sushi
Sushi originated from China between the 5th and 3rd centuries BC. Narezushi appeared in Japan in the 8th century and still survives today (www.eat-japan.com)

Cooking instructions
* Step 1
Add 4 cups rice in a bowl. Add cold water, mix gently with fingers and drain the water. Repeat three more times until the water becomes clear. Drain and then add 4 more cups cold water and let stand for 30 minutes to swell up the rice.
* Step 2
While rice is standing, mix rice vinegar, salt and sugar. Stir until dissolved.
* Step 3
Drain water from rice after standing and add 4 cups water and bring to a boil in large pot. Reduce heat and let simmer a additional 20 minutes. Remove from heat and gently add the vinegar mixture to the rice. Once mixed, let set for one hour to cool off
* Step 5
Several gadjets exist to make the rolls. I suggest going on line to learn how to roll your sushi with whatever item you have on hand.
* Step 6
Lay a layer of Nori Sushi Seaweed on your preferred rolling bamboo rough side up. Using wet hands add a layer of rice on top of your Nori paper and spread to cover leaving a inch of room at the top and half inch at the bottom. (watch any video on how to use other gadgets to roll sushi) Add Cucumber, Salmon, Crab and Avocado to the center and roll. With sharp knife cut into six sections. Then serve
