Sambal Teri (Indonesian Anchovy Sambal)
My late Mama loved sambal. She loved anything spicy. I sometimes helped her making some, even though I couldn't (still can't) stand spicy food. This is one of my favorites. I've been making this a lot. We usually eat this with steamed rice or porridge.
Cooking instructions
* Step 1
Fry small anchovies until they turn a bit brown. Remove from oil, set aside.
* Step 2
Ground chili peppers, tomatoes, shallots, garlic cloves, sugar, and salt. I use a traditional stone mortal and pestle, but you can also use a blender.
* Step 3
Heat 1 tbsp of oil in a pan, low heat, then pour the ground mixture there. When it is sizzling, add small anchovies. Stir for a couple of minutes, turn off the heat. Pour lime juice to your liking, then serve.
