Korean Chicken Rice Salad/Bowl
I needed healthy, but wanted the flavors of Korea. My wife wanted rice, so I kind of fudged a Vietnamese style noodle salad, and created this. My wife really liked it, I prefer noodles myself, it's more a texture thing. This is still pretty good, and healthy overall. Sorry of like a bibimbap, but more lettuce replacing some of the rice, and a not spicy sauce instead.
It lends itself to what you have on hand, and is not really difficult.
Cooking instructions
* Step 1
Start your rice if you need to cook it
* Step 3
Slice chicken into bite size pieces
* Step 4
Put ingredients for Meat in
* Step 5
Mix well, i use my hands, set aside
* Step 7
Mix all sauce ingredients except green onion. Mix well.
* Step 8
Add green onion, mix well, set aside.
* Step 10
Prep veggies that you want to blanch
* Step 11
Start chicken, just skillet cook it in a little oil.

Cook spring rolls (I'm using my air fryer, 7 minutes)

Allow chicken and spring rolls to cool, set aside
* Step 15
Blanch any veggies that need it
* Step 16
Clean lettuce, shred into bowls
* Step 17
Place rice on top of lettuce in the center. The rice I made had some mushrooms and lentils in it, so it is a darker color.
* Step 18
Arrange meat, spring rolls around, and the veggies.
* Step 19
For me, I add some sauce, and hot sauce, and stir it up well, taste, add more sauce if required.
