Cooking instructions
* Step 1
Grind the shallots and garlic in a blender.
* Step 2
Rub this mixture into the meat and all other ingredients except pandanus leaves and oil for deep frying.
* Step 3
Set aside to marinate for 2 hours.
* Step 4
Wrap each piece of chicken thigh in a pandanus leaf, tying it in a simple knot so the meat is enclosed by the leaf as shown. Please see the video below.
* Step 6
Deep fry the meat parcels in a very hot oil for 3 - 5 minutes until cooked.
* Step 7
Serve hot, still in pandanus leaf, allowing each dinner to unwrap his or her own portions.
