Ivy gourd pepper fry
Ivy gourd is one of the best vegetables for type 2 diabetes patients. Apart from keeping the glucose levels in control, it reduces blood sugar levels.
Cooking instructions
* Step 1
Wash Ivy gourds and thinly slice them.
* Step 2
To the sliced ivy gourds add turmeric powder and a tsp of salt and mix well. Cover them and keep it aside.
* Step 3
For the spicy masala powder: To a hot pan add curry leaves, Cumin seeds, Peppercorns and dry roast them for few minutes. Transfer everything into the mixer jar and grind. Once it's 80% grinded add a tsp of coriander powder and grind it to a fine powder. Powdered masala is ready.
* Step 4
Heat up the same pan,add oil,Chopped onions, garlic and saute it until they turn golden brown in color.
* Step 5
Then add chilli powder and let it saute until the raw smell goes away.
* Step 6
Now transfer the sliced Ivy gourds into it and mix well. Cover cook for 10 mins or until 50% cooked.
* Step 7
After 10 minutes, add required salt and mix well. Cover cook for 5 minutes or until 90% cooked.
* Step 8
Now add the powdered masala into it/ give it a good mix. And let it cook for few more minutes.
* Step 9
Once Ivy gourds has cooked completely give everything a final mix and switch off the flame.
* Step 10
Tadaa...! Done.... Ivy gourd pepper fry is ready to be served.Enjoy it with steaming hot rice,curd rice or with any food you like.
