Firstly, to make “Red Poha-Potato Fingers”, add the red poha to a grinder and grind it to a fine powder.

Wash, boil and mash the potatoes when hot. Mashing hot boiled potatoes and passing them through a sieve is a clever technique to achieve a smooth potato mash effortlessly. The sieve effectively separates the skin, leaving you with a velvety potato puree, ready for your culinary creations.

Transfer the red poha powder into a large mixing bowl. To it add red chilli flakes, pepper powder, salt, all-purpose flour, corn flour, crushed garlic, chopped green chillies and coriander leaves and mix it well.

Add the mashed potatoes and mix it well. Form it into a soft dough.

To craft these delectable treats, oil your hands, shape a small dough ball, and roll it to the desired thickness. Gently slide it into hot oil, deep-frying on medium flame until achieving a crisp, golden brown exterior. Once done, drain on kitchen paper towels to eliminate excess oil.
