Moong Dal Dhokla
Cooking instructions
* Step 1
Firstly, in a wet grinder, add the washed and soaked (overnight) moong dal, green chillies, ginger and very little water and grind to a smooth paste.
* Step 2
Transfer the paste into a mixing bowl.
* Step 3
Add turmeric powder, red chilli powder and salt and mix well for about 4-5 minutes. Then add the lemon juice.
* Step 4
Add the Eno lemon fruit salt and give a gentle and quick mix. Immediately transfer it into a greased container and tap it gently.
* Step 5
For steaming the dhokla, add water in a steamer. When the water starts to boil, place the batter filled container and cover and cook for exactly 15 minutes.
* Step 6
After the set time, check with a toothpick. If the toothpick is clean, it is done perfectly. Put the switch off. Remove from the steamer and allow it to cool down.
* Step 7
After it is cool, grease a butter knife and run it along the entire circular edge and de-mould it.
* Step 8
Cut into desired shape and size.
* Step 9
For the Tempering: In a tadka pan, heat oil. Add mustard seeds and allow it to crackle. Add the slited green chillies and curry leaves and let it splutter. Add water and sugar and mix it well. Allow it to come to a boil. Add lemon juice and turn off the heat. Pour the tempering all over the dhokla.
* Step 10
Let it rest for 15 minutes.
* Step 11
Soft, Juicy, Spongy and Delicious Moong Dal Dhokla is ready to serve. Enjoy!!
