Moong Dal Vada

Cooking instructions
* Step 1
Wash and soak moong dal for 4 to 5 hours.
* Step 2
Drain out the water and blend to a smooth paste adding 1/4 cup water.
* Step 3
Transfer the moong dal batter into a mixing bowl.
* Step 4
Add 3 tbsp rice flour for crispy vadas and more if you require thick batter.
* Step 5
Add green chillies, ginger, onion, coriander leaves, cumin powder and salt. Mix well.
* Step 6
Add baking soda and give it a good mix.
* Step 7
Heat oil in a deep frying pan. Dip you hand in water and start dropping the batter one by one into the hot oil.
* Step 8
Keep the flame low to medium. Stir occasionally. Fry the vadas till they turn golden brown.
* Step 9
Drain the vada on to a kitchen towel to absorb the oil.
* Step 10
Serve Moong Dal Vada hot with any chutney or sauce.
