Mixed Vegetable Pulao

Cooking instructions

* Step 1

Wash the rice till the water runs clear. Soak the rice in water for 15 to 20 minutes. Keep aside.

* Step 2

Heat ghee/oil in a cooking pan. Add the whole spices and saute them for 30 seconds.

* Step 3

Add the green chillies and onions and saute till the onions are translucent.

* Step 4

Add the ginger garlic paste and cook till the raw smell goes.

* Step 5

Add tomatoes and salt and cook till the tomatoes are soft and mushy.

* Step 6

Add the spice powders and saute for a minute.

* Step 7

Add the potatoes, green peas, cauliflowers and carrots and little water and cover and cook for 5 minutes.

* Step 8

Add the soaked and drained rice and fry it with the vegetables for a minute. Now add the water and increase the flame to high and let it come to a boil. When it starts boiling, reduce the flame to low and cover and cook till all the water is absorbed and the rice is cooked.

* Step 9

Mixed vegetable pulao is ready. Enjoy with yogurt or Raita.
