Wood Apple or Bael fruit is available in abundance during summer.It is flavourful and mildly sweet in taste.The pulp makes a popular health drink due to its cooling effect and can be prepared in various ways like smoothie, sharbat or juice, milkshake, murabba,candy etc.

Cooking instructions
* Step 1
Crack open the ripe bael fruit to reveal the fragrant, yellow fibrous flesh with seeds enveloped by a gel like substance. A ripe bael tastes sweet. Scoop out the pulp with a spoon in a wide bowl.Discard the gel like substance and seeds as much as possible. Gradually add water and mash with hands or masher.
* Step 2
Add sugar and 2 tbsp yogurt.Mash well and strain all pulp discarding the fiber and seeds.The pulp is now thick.
* Step 3
Muddle few mint leaves.Pour the pulp, mint leaves, rest of yogurt and ice cubes in a blender. Blend till frothy. Adjust consistency of smoothie after blending as ice cubes will release water. Pour in individual glasses. Sprinkle pinch of black salt and ice cubes in each glass. Garnish with chopped nuts and mint leaves.
* Step 4
Serve chilled and stay hydrated during the scorching heat of summer.
