It is a perfect summer recipe as both watermelon and cucumber have water content to keep you hydrated throughout the day as well as it is filling. The watermelon, cucumber and peanuts salad is refreshing and delicious and a treat to taste buds.This Watermelon Salad can be prepared under 10 minutes using simple ingredients. Serve it for light lunch or pair it with soup or crusty bread for a filling meal.

* Step 1
Peel and cut the watermelon into cubes.Remove seeds as much as possible. Peel the skin of cucumber or keep it on, that is up to you.Cut into cubes or slice into rounds.Red onion lends a nice crunch and spicy taste to the salad and pairs very well with the sweetness of watermelon. Toasted peanuts and sesame seeds give a lovely crunch to this salad.Other nuts like almonds, walnuts or cashewnuts maybe used to replace peanuts.
* Step 2
Simple dressing ingredients are used here to make the salad flavourful. Fresh lime juice, vinegar, black pepper powder, black salt or regular salt are sprinkled on the salad.
Fresh herbs like mint leaves and chopped coriander give a refreshing flavor to the salad.Pour the dressing over the salad just before serving..
* Step 3
Chill watermelon, capsicum and cucumber.Add sliced onion.Pour the dressing over the salad just before serving and toss to mix well.To retain the crunch of peanuts and sesame seeds sprinkle and toss into the salad just before serving. Garnish with chopped mint and coriander leaves.Watermelon and cucumber release lots of water.So this salad is best served immediately after making it.
