Aloo Suji Pitha or Potato Semolina Sweet Dumplings

#LFB This is a delicious Pitha or Pithe which is a perfect treat for your Valentine on Valentine's Day or for any special occasion. Pitha is a form of dumpling stuffed with sweetened coconut or khoya. There are many variations of pithas which can be made with potato or sweet potato, semolina, rice flour or refined flour.These Pitha or Pithe are popularly made with winter special nolen gur or date palm jaggery.They are soft with melt in mouth texture and your loved ones will at once fall in love with its first bite. There are many occasions where the significance of the event is celebrated with pitha.It is mainly done during the rice harvest festival called Poush Sankranti. But can also be relished during special occasions like Valentine's Day and other festive seasons.

Cooking instructions

* Step 1

Boil and mash or grate potatoes.Soak sooji in 1/4 th cup warm water for 10 minutes.Add rice flour and refined flour as needed.Sprinkle a pinch of salt. Mix and mash all to form a dough.Set aside.Assemble ingredients for coconut filling.

* Step 2

For coconut filling: Boil jaggery in 1/2 cup water till it melts.Add grated coconut and toss to mix with jaggery syrup. Make a thick paste of milk powder along with warm milk.Optionally khoya may be used.Add this to the coconut and cook till coconut mixture thickens.Remove the pan from heat and set aside to cool down.

* Step 3

For Outer Layer and Final Aloo Semolina Pitha/ Dumplings : Make small balls of dough and flatten each ball pressing the centre to give it a cup shape.Fill the centre with the coconut mix.Fold the dough carefully to form a semi-circle and seal the edges.Repeat the process for each dough ball.Heat oil in a pan.Add the dumplings in batches in the hot oil.Deep fry the dumplings till they turn golden brown.

* Step 4

For syrup/chasni : Boil 2 cups water in a wok.Add jaggery and boil till it melts.It should be of 1 string consistency. Set aside to cool. Dip the fried dumplings in this syrup and allow the syrup to soak in the dumplings.Serve at room temperature as an aftermeal dessert to your loved ones and relish. A point to be noted: When date palm jaggery is not in season, these dumplings may be made with sugar.Both ways they taste delicious.
