Leftover Potato Masala

#goldenapron23 #week25 #LeftoverPotato Potato Masala or Aloo Masala is a flavourful and delicious South Indian side dish of boiled potatoes which are tempered with whole spices, onions and herbs.Here it is made with some leftover boiled potatoes. This Leftover Potato Masala can be served as a stuffing inside crispy masala dosa or uttapam along with coconut chutney and sambar.This can also be eaten as a side with poori, roti or any kind of Indian flatbread .This delicious aloo masala can also be served as a stuffing for wraps, rolls and sandwiches. Aloo Masala is easy and fast to make if you have some leftover boiled potatoes in your fridge. A few handful ingredients are needed and key to infuse simple boiled potatoes with aromatic flavours.

Cooking instructions

* Step 1

Use leftover boiled potatoes or boil them in a pressure cooker upto 3 whistles on medium flame.The potatoes should be just cooked and not mushy.

* Step 2

Heat oil in a wok or pan.Fry peanuts till golden brown.Set aside.Add cumin and mustard seeds.When they splutter,add chana dal.Fry till golden and add hing.Add ginger and saute for 30 seconds. Pour 3-4 tbsp water to soften the dal.Cook till water evaporates. Add curry leaves and fry till crisp.Then add onion, green chillies and saute till onions are translucent. Next add the boiled potatoes,chopped coconut, turmeric, red chilli powder and salt to taste.

* Step 3

Mash the potatoes coarsely and sprinkle 2 tbsp of water or boiled potato stock.Stir and cook for 2-3 minutes. Sprinkle lemon juice and toss till well mixed.Garnish with chopped coriander and stir.Serve delicious Leftover Potato Masala with dosa, puri,chapati, in sandwiches or as a side with rice.
