Baked Sweet Corn and Vegetables in White Sauce

#goldenapron23 This is a delicious ,healthy and wholesome meal recipe of sweet corn and vegetables cooked with white sauce and baked to perfection with lots of cheese.Assorted colourful veggies of choice mixed with white sauce are topped with breadcrumbs and cheese and baked till cheese melts and forms a thin luscious layer over corn and vegetables. This dish has sweet corn and various vegetables like carrots, capsicum,potato, green peas and when baked with white sauce and cheese is a healthy and flavorful meal loved by kids and adults as well and enjoyed with grilled garlic bread.

Cooking instructions

* Step 1

Peel and chop into small cubes potato and carrot.Steam or pressure cook them along with sweet corn upto 1 whistle. Release steam and strain water.Set aside.Heat butter in a pan.Now add all purpose flour and stir fry for one minute till there is no raw smell.

* Step 2

Add milk to the pan gradually and whisk it well to avoid lumps.Bring it to boil on low to medium flame and add half onion,1 bay leaf and 2 cloves.Add salt to taste,black pepper powder,chilli flakes and mixed herbs. Boil 2-3 minutes stirring constantly. Remove the onion,cloves and bay leaf and sprinkle 1 cube grated cheeseStir to blend well to get a silky smooth white sauce without any lumps.

* Step 3

Heat olive oil and butter in a wokNow add minced garlic and chopped onion. Stir fry lightly and add the parboiled vegetables, sweet corn along with green peas and capsicum. Other vegetables of choice may also be added.Sprinkle salt to taste,black pepper powder,chilli flakes,mixed herbs and stir fry for 3-4 minutes. Add white sauce.

Sprinkle 1 cube grated cheese and toss to mix well.Grease a baking bowl with butter.Transfer the vegetables to the bowl.Cover with some more white sauce.

Sprinkle some fine breadcrumbs and grated cheese.Preheat oven for 10 minutes and bake it at 180°C for 12-15 minutes till the cheese has melted and the topping turns crispy golden brown.
