Carrot Halwa Gujiya

#Mar #W2 Gujiya is a popular North Indian sweet semi circular dumplings made of all purpose flour crisp flaky pastry and filled with various types of stuffings.Carrot ( gajar) Halwa Gujiya is a special treat for Holi. This is an unique way of making these gujiyas stuffed with carrot halwa or Indian Carrot Pudding and dry fruits .They are then deep fried and dipped in mildly sweetened sugar syrup to make it more attractive and tasty.This type of gujiya is specially made during the festive seasons specially for Holi or Diwali. milk

milk powder

1 tbsp

malai

2 tbsp

raisins

2 tbsp

ghee

1 pinch

salt

1 cup

water

Cooking instructions

* Step 1

For making Carrot Halwa: Heat 1 tsp ghee in a pan and lightly roast chopped cashewnuts and almonds.Saute raisins and set all aside.Add 2 tbsp more ghee in the pan and saute grated carrots till they start wilting.Add milk and cook for 2 minutes. Make a thick slurry of powder milk.Add it to the frying carrots alongwith fresh cream or malai.Add sugar and mix to combine all.

* Step 2

Continue cooking till the mixture gets thick.Add cardamom powder and mixed dry fruits.Saute for 2-3 minutes.Set aside to cool.

For kneading dough for crust : Seive the flour.Add pinch of salt, 2 tbsp ghee or as needed, baking powder and mix all. Add water gradually and knead till smooth and dough stops sticking to your hand.Cover and set aside for 15 minutes.

* Step 4

For making Gujiya : Divide the dough into lemon sized balls. Roll out into a 3-4 inch diameter circle.Place the circle on a gujiya mould.Place stuffing on half of the circle.Smear water all over the edge and fold the mould and press.Remove the excess portion of dough after sealing the edge. Optionally it can be done by hand by pressing and folding by hand into a semi circular disc.Do not over fill the gujiya with stuffing,otherwise they might open while frying.

* Step 5

Heat sufficient oil in a pan and fry gujiyas in batches in low to medium flame.Makes about 6-7 gujiyas.Increase quantity of flour for making more gujiyas.Fry till golden brown.

* Step 6

For making sugar syrup: Boil sugar with water in a wok. Keep stirring till sugar dissolves completely.Let it boil till reduced to a honey like consistency. Set aside to cool partially.Drop the gujiyas in sugar syrup and toss lightly to coat both sides.Place them on a plate so that excess syrup drips out.

Lightly coated with sugar syrup, delicious Carrot Halwa Gujiya are ready to be served.For storing, cool the gujiyas and store in airtight container. Keep refrigerated if made in larger quantities, to improve shelf life of gujiyas and relish Holi Special or on other occasions Carrot Halwa Gujiya.
