Flat Beans with Coriander paste (Dhaniya Shim)

This is a traditional Bengali style of cooking Shim ( Flat or Broad Beans) with coriander and mustard paste and cooked in mustard oil to make it flavourful. Pair this winter special Dhaniya Shim with steaming hot rice and dal in lunch or dinner.

Cooking instructions
* Step 1
Cut the tips of Flat Beans (Shim).Cut into 2 pieces after removing the veins from the sides.Wash and pat dry Soak mustard and sesame or poppy seeds in warm water for 10 minutes.Grind it to a smooth paste alongwith 2 green chillies,4 cloves garlic and 3 tbsp water.Add chopped coriander leaves to the paste.Add 1/4 th tsp salt and 1/4 th tsp sugar to retain the colour of the leaves.Set aside.
* Step 2
Steam the beans in salted water for 3-4 minutes until they are partially cooked. Heat 2 tbsp mustard oil in a pan.Sprinkle kalonji or nigella seeds and 1 dry red chilli.When they splutter,add the chopped beans and fry them lightly.
* Step 3
Add salt and sugar to taste.Add 1/4 tsp turmeric and red chilli powder.Add the wet ground paste.Toss and fry 2 minutes. Drizzle some water or as needed to cook the beans.Add 1 or 2 green chillies and cook till masala coats the beans.A point to be noted : beans should be properly cooked but not mushy.
* Step 4
Sprinkle 1 tbsp more raw mustard oil and toss.Switch off flame and garnish with 1 dry red chilli and slit red chilli.Serve as a side with steaming hot rice and dal and relish the flavours of winter special Dhaniya Shim in lunch or dinner.
