Moong Sprouts Salad is a crunchy,nutritious and colorful salad made with moong bean sprouts, onion,tomato,capsicum,cabbage, carrots,spring onion,green chillies,coriander and roasted peanuts.Sprouting any kind of legumes,nuts or seeds increases their nutritional value and also are easily digestible. Moong Beans also known as Green Gram is used in various Asian Cuisines in different ways. This Moong Sprouts Salad makes for a healthy breakfast option, can be consumed as a side for a light and nutritious lunch or relished as a snack with a cup of evening tea.

Cooking instructions
* Step 1
Clean and rinse Moong Beans 2-3 times.Soak them in clean filtered water overnight.Next day drain out the water and rinse in clean water.Take a cotton cloth or muslin.Dip it in water and wring out excess water.Spread the Moong Beans on the damp cloth.Gather all the edges and tie it loosely making sure to allow air to enter.Place it in a bowl and set aside to sprout.Sprinkle some water if the cloth gets dry.It takes 10-12 hours to sprout well.After sprouting,cover and refrigerate till use.

Assemble all ingredients required for this healthy and nutritious salad.Mix the chopped vegetables in a bowl with the sprouted Moong Beans.Add roasted peanuts for added crunch and toss.
* Step 3
Season with salt, black pepper,roasted cumin powder and chaat masala.Add chopped coriander and lemon juice.Toss to combine all.Refrigerate for 30 minutes and serve in breakfast with soup,as a side with dal, rice,grilled paneer,chicken or fish in lunch or evening snack with nachos, tortilla chips etc.
