Multi Millet Dhaniya Paratha

Winter is blessed with lots of fresh vegetables and coriander leaves taste best during this season.This paratha is prepared using wheat flour and multi millet atta comprising of ragi, jowar ,bajra,wheat flour,fenugreek with a prominent flavour of coriander in it.Coriander is chopped finely alongwith stems for flavour and tastes delicious as well as a healthy way of using fresh herbs in your diet.Serve these parathas with mixed pickle, curd,raita,salad or any dry curry of choice for a healthy breakfast, lunch or dinner.

Cooking instructions
* Step 1
Mix millet flour with wheat flour.Sprinkle 1/4 th tsp salt, ajwain and kalonji.Add minced green chillies, the chopped coriander leaves and 1 tbsp oil. Mix all.Add 1 cup warm water or some more if needed and knead to make a firm dough but not too hard.The dough should be smooth but firm in consistency and easy to roll out.
* Step 2
Divide dough into 5-6 balls.Dust the rolling board with some atta.Roll the paratha into a circle. Brush some cooking oil and fold into a semi circle and then a triangle.
* Step 3
Roll out into a triangle.Press some kalonji and chopped coriander over it.Flip and roll out.Heat a non-stick pan and roast both sides till brown specks appear.Drizzle 1 tsp oil and fry, flipping making sure it is cooked uniformly and turns crispy and golden brown.
* Step 4
Serve delicious Multi Millet Dhaniya (Coriander) Paratha with curd, raita, mixed pickle or curry of choice for a healthy breakfast,lunch or dinner.
