Paneer Pulao

#FM #W2 #ChoosetoCook Paneer Pulao is a tasty and nutritious main course rice dish with all the goodness of mixed vegetables and protein rich toasted paneer cubes. This pulao has mixed vegetables of choice like carrots ,beans, green peas alongwith roasted cashewnuts and raisins and paneer.It is a great choice for weekend lunch or dinner or for special occasions. It can also be packed in lunch box. Cook rice alongwith sautéed vegetables in a pressure cooker and then mix paneer in it. Fluff the rice and paneer with caution so that they don't break.However this dish can also be made in a pan covered under medium to low flame. Serve hot with veg or non-veg curries or raita.

Cooking instructions

* Step 1

Heat oil in a pan and fry the paneer cubes until light brown on all sides.Set aside.In the remaining oil add 1 tbsp ghee.Lightly fry the cashewnuts and set aside. Sprinkle cumin seeds,bay leaves and half crushed whole garam masala. When they splutter,add chopped onion and fry till onion is translucent.Add cubed carrot and sprinkle salt.Fry till carrot is partially cooked.

* Step 2

Add 1 tbsp more ghee to the pressure cooker and transfer the fried onion and carrot to it.Add green peas,cashewnuts, raisins,garam masala powder and the washed and drained rice to it.Add ginger paste,salt and sugar to taste and fry few minutes.Pour 3 cups warm water and pressure cook upto 2 whistles.Open lid after 2 minutes. Fluff the rice gently and add paneer cubes.Cover the cooker and allow the paneer to soak in the flavours of spices.

Fluff the rice gently with a fork taking care not to break the rice and paneer cubes.Transfer it to a serving bowl.Garnish with some paneer cubes and serve hot with a side of raita or with veg or non-veg curries.
