Kolkata Style Chicken Rezala

#FM #W1 #ChoosetoCook Chicken Rezala is a Royal Mughlai dish which gained its popularity in the Eastern State of India, West Bengal. It is marinated with spices and slow cooked to get a perfect melt in mouth texture with a medium thin white gravy. The tanginess of curd,,the sweetness of sugar.aromatic spices and a mildly spicy creamy gravy of cashewnuts, poppy or sesame seeds and fresh cream with a perfect blend of ghee,garam masala and Mitha Attar and topped off with a garnish of red chillies lends a magical touch to this Royal Mughlai dish.This dish is perfect for parties or weekend special dinner and best served with roomali roti, naan, steamed rice or pulao.

Cooking instructions

* Step 1

Marinate chicken with 2 tbsp curd, 1 tbsp refined oil,white pepper powder and 1/4 th tsp salt for minimum 2 hours.Make a paste of chopped onion,green chillies, ginger and garlic.Heat oil and ghee in a pan and lightly fry dry red chillies.Set aside.Next sprinkle half crushed whole garam masalas,whole black peppercorns.When they sizzle, add the ground onion ginger garlic and green chilli paste and saute.Add the marinated chicken and fry.

* Step 2

Make a fine paste of soaked sesame seeds and cashewnuts along with milk and fresh cream or malai.Whisk the remaining curd.Add this ground paste alongwith whisked curd and coriander powder to the chicken.Add salt and sugar to taste.Add bay leaf and continue frying till oil leaves sides.Care should be taken so that masala is not browned while frying. Add warm water.Cover and cook in low flame for 15 minutes till chicken is fully cooked.

Add Meetha Attar and rose water and cook few more minutes.Adjust gravy.Sprinkle garam masala,chopped coriander and garnish with dry red and green chillies.

Chicken Rezala is ready to be served at parties or special weekend dinner and pairs very well with roomali roti,naan or any Indian flatbread and also with rice or pulao.
