Shukto is a traditional Bengali recipe normally made with mixed vegetables and bitter gourd. This recipe is made with bottle gourd and bitter gourd and tastes delicious. Serve this mildly bitter Lau Shukto with karela as the first course menu in lunch with steamed rice.

* Step 1
Peel and cut lauki into thin 1 inch sticks.Boil or pressure cook with 1/4 th cup water, just 2 whistles and open lid immediately. Set aside.Slice karela also into thin strips.Heat oil in a pan or wok.Fry bori till golden brown. Set aside.Then smear salt in karela and fry them.
* Step 2
Add the tempering in the remaining oil alongwith dry red chilli.When they splutter, sprinkle hing.Add the parboiled lauki,fried bori or lentil dumplings,and karela. Toss and add ginger paste, salt and sugar to taste and grated coconut.Fry few minutes and add the water in which lauki was boiled.Also add milk and mustard paste.
* Step 3
Cover and cook till bori and karela are soft and lauki perfectly done.Sprinkle some grated coconut.Now add the dry roasted and ground bhaja masala. This adds a nice aroma to this traditional Bengali Lau Shukto.Toss and garnish with dry red chillies.Serve it as the first course menu in lunch with steamed rice.
