Garlic Butter Kulcha

#boxweek9 Kulcha is a delicious flatbread which has a crispy crust but soft inside. It is topped with aromatic spices which makes it all the more flavourful. There are two types of kulcha : 1. Plain kulcha topped with aromatic spices. 2. Stuffed kulcha Both ways they taste delicious and popular in North India as well as all Indian restaurants all over the world.Here I have shared a non-stuffed kulcha but bursting with the appetizing aroma of minced garlic,butter,chopped coriander and black sesame seeds.Choley Kulche are a perfect combination and popular in almost all restaurants but also pairs well with spicy and tangy specially North Indian gravies or curries like Kadai Paneer,dal tadka,dum aloo,Butter Chicken etc.

Ingredient

Cooking instructions

* Step 1

Pour warm water in a bowl.Add sugar and then add the yeast to activate.Sift flour by adding salt.If adding baking powder and soda,add it and mix well.If adding yeast, activate and mix it in flour.Add melted butter or ghee,salt, milk and curd.Mix all and knead adding warm water as required.Cover with a damp cloth and leave it for 2 hours in a warm place for the dough to rise.Apply some ghee on your palm and start flattening the dough while kneading for at least 5 minutes.

Meanwhile mince garlic and chop coriander finely.Divide dough into equal size 6 balls and roll into an oval shape.Press minced garlic, chopped coriander and black sesame seeds or nigella seeds on the kulcha.Smear water on the opposite side of kulcha.Heat a tawa and place the watered side down.Sprinkle some more water on the sides and cover and roast in medium flame for 1 minute till bubbles appear and there are brown spots underneath.

Place the kulcha on a roti wire mesh and roast the top side till brown spots appear. Smear melted butter on hot kulcha and serve with chole or any other spicy dishes like kadai paneer,dum aloo,dal tadka, butter chicken etc.
