Dates and Dry Fruits Chocolate Cake

This is a simple but delicious melt in mouth creamy chocolate cake with lots of dry fruits and nuts .It is quick and easy to make and can be enjoyed anytime with a cup of coffee or tea ,or as a dessert on special occasions like Easter or any festival.

Cooking instructions
* Step 1
Chop all dry fruits like cashewnuts,almonds, deseeded dates,raisins, cherries,petha and set aside.Grind sugar.Sieve flour,cocoa powder,coffee,baking powder and pinch of salt.
* Step 2
Beat 2 eggs in a mixer or with a hand blender till fluffy.Add butter and powdered sugar and beat well.Add this wet mixture to the flour.Also add cream.Blend all well adding milk gradually.Add Eno, the chopped dry fruits,dates and nuts.Mix well. Grease 2 cake tins with oil.Place a butter paper underneath and pour the cake mix in both tins.Sprinkle few dry fruits and chocochips on the top.
* Step 3
Preheat oven. Bake each cake at 180°C for 30 minutes.Insert a toothpick. If it comes out clean,the cake is done.Remove the butter paper by turning the cake upside down.Turn over and cut the cake into pieces.Enjoy soft melt in mouth chocolate cake with a cup of tea or as a dessert on special occasions.
