Chicken Tawa Masala

Chicken Tawa Masala or Pan Fried Spicy Chicken is an extremely flavourful dish which can be prepared within minutes.There are different ways of cooking this dish.Traditionally this dish is prepared on a flat iron tawa or griddle.Otherwise a fry pan may be used.Boneless chicken cubes are cooked with tomato,onion,capsicum,roasted cashewnuts and other spices over high heat then simmered till chicken is crisp outside and soft inside.Goes best as an appetizer or a side dish with tandoori roti,naan or paratha.

Cooking instructions
* Step 1
Marinate chicken with tomato puree, cornflour and little salt and black pepper for 1 hour.Heat oil in pan and stir fry cubed capsicum and onion.Set aside.
* Step 2
Stir fry the cubed chicken pieces till light brown.Fry 2 dry red chillies.Sprinkle grated ginger and garlic and fry lightly.Add the cubed tomato and stir fry.Add ginger garlic paste, red chilli powder,tandoori masala, malai or fresh cream, salt and pinch of sugar.Toss all and add the chicken and cook over medium heat till soft and juicy.
* Step 3
Add pan fried onion and capsicum.Add chopped coriander and toss.Garnish with roasted cashewnuts, dry red chillies and green and red chillies.Serve hot as a starter or as a side dish with paratha, tandoori roti or naan.
