Sweet Potato and Moong Dal Pithe

#sankranti/post-3 This is a traditional Bengali recipe made for harvest festival.It is made flavourful by adding nolen gur (date palm jaggery) to coconut stuffing.The dough is made by mixing split yellow moong dal,sweet potato and rice flour.It is then deep fried and immersed in a sugar or jaggery syrup.

Cooking instructions

* Step 1

Cut and boil potatoes till just soft but not mushy.Dry roast yellow moong dal and boil with a pinch of salt till just soft and dry.Strain excess water if any in dal.Mash the boiled moong dal and potatoes.Add rice flour and all purpose flour and knead well so that there are no lumps in it.

To make the stuffing scrape coconut.Boil half cup water and add jaggery.Boil till lumps melt.Add coconut and toss.Crush khowa and make a paste of powder milk.Add all to the coconut mix and toss well.Toss till a dry lump is formed.Make even sized 20 balls approximately.Shape into small bowls and press 1 tsp stuffing in it.Close by pressing both ends and give it an elongated half moon shape.

* Step 3

Toss the pulis in flour.Heat oil in a pan and fry the pulis golden brown.Make a sugar syrup by boiling sugar and water till one string consistency.Allow it to cool a little.Then dip the pulis in it.Cool and serve.
