Instant Veg Rava Idli in Microwave

#ebook /post-21 #oven / post -1 Idli like vada is a popular breakfast item in South India.It is very healthy as it is steamed and very little oil is used.Normally idli is prepared by soaking rice and lentils overnight, grinding and fermenting it.But Rava or Semolina Idli requires no such elaborate procedure.It can be made instantly by soaking rava with curd and baking soda or Eno Fruit Salt.Adding some finely chopped vegetables makes it more healthy and delicious.Serve rava idli with sambar or coconut chutney in breakfast or as a healthy snack to guests.

Cooking instructions

* Step 1

Pour semolina in a bowl.Add curd.Add water and mix to make a thick batter.Add salt to taste and cover and set aside for 10 minutes.Meanwhile grate carrot,chop finely green chillies,tomato,coriander.Other vegetables like capsicum or beans finely chopped may be added.After 20 minutes mix the vegetables in the batter.Heat 1 tsp oil in a tadka pan and sprinkle mustard and cumin.Add hing and grated ginger.Finally add curry leaves.Pour this in the batter.

Mix the batter thoroughly sprinkling little more water if needed.The batter should be thick.Add Eno and beat well till fluffy.Grease microwave safe idli moulds with little oil.Pour a ladle full batter in each mould.Heat 1/2 cup water in microsafe container for 1 minute.Place a perforated container in it.Slowly set the batter moulds in the container. Cover and microwave high power for 1.5 minutes.Insert a toothpick to check if idlis are done.

With the help of a knife slowly free the edges and remove the idlis from the mould.Arrange in a plate and serve hot with sambar(mixed veg lentil soup),coconut or coconut peanut chutney.
