Banana Stem curry (Thor ghonto)

This is a traditional and delicious cuisine of Bengal.Banana stem is highly nutritious as it is rich in iron,vitamins and fiber.The Bengali name for this is 'Thor' and as it is a dry preparation it is called 'ghonto'.

Cooking instructions

* Step 1

Remove the outer layers of the banana stem. Chop the tender inner part of the stem into 1"size sticks.Dip it in water with some haldi and salt.Discard the water after half hour and pressure cook in little water 2 pressures.Release steam after sometime and lightly crumble with a masher.

* Step 2

Chop 1 potato into very small pieces and fry in low flame till soft.In the remaining oil fry the dry red chilli and set aside.Sprinkle cumin,fennel and methi seeds and when they splutter,add the mashed banana stem and potato.Add turmeric,red chilli powder,jeera powder,ginger and scraped coconut.Toss and fry.Add the stock of banana stem and let it cook till all the masalas are bound together to form a lump like consistency.

* Step 3

Garnish with broken dry red chilli and green chillies,garam masala and chopped coriander leaves.Sprinkle 1 tsp ghee and serve with rice.
