Tomato Rice

#comfortfoodrecipes - Tomato rice is a great comfort food for me as it is a quick fix meal that can be dished out in no time. I enjoy it as a snack / breakfast / lunch along with some pickles and papad. You can use some sambar powder to enhance the flavour. Few roasted peanuts cashew nuts too can be added for some slight crunch.

Cooking instructions

* Step 1

Heat oil & temper with mustard seeds. Saute for a few seconds. Add the asafoetida, urad dal & chana dal & saute till it changes colour. Then add onion, ginger, garlic, fresh chilies & curry leaves. Fry till light brown.

* Step 2

Add the tomatoes and turmeric powder. Saute till it is mashed up. Add the rice, salt and sambar powder. Saute for 2-3 minutes.

Serve, garnished with coriander leaves.
