Kakarakaya Vepudu (Bitter Gourd Stir Fry - Andhra Style)
#diabetes - This is a typical Andhra style bitter melon cooked with a medley of spices. It is best had with hot steamed rice and with some ghee drizzled over it. All the bitter melon lovers will simply enjoy relishing this delicious dish.
Cooking instructions
* Step 1
Scrape the bitter melon and slice them finely. Add a tsp. of salt and keep aside for an hour. Wash well. Drain and keep aside.
* Step 2
Heat oil in a pan and temper with mustard seeds. After it stops spluttering, add the urad dal, chana dal and asafoetida. Saute till the dal changes colour.
* Step 3
Add the onion, garlic and curry leaves. Saute till light brown.
* Step 4
Then add the bitter melon, salt and turmeric powder. Cover and keep frying on a medium flame till it is soft.
* Step 5
Then add red chilli powder and sugar.
* Step 6
Continue to fry further for a minute more.
* Step 7
Serve with hot steamed rice and with some ghee drizzled over it
