Cooking instructions

* Step 1

In a bowl put the chia seeds with milk and keep it aside for 30 minutes.

* Step 2

In another bowl add gelatine and water and keep it aside for 10 minutes for the gelatine to bloom. Microwave it for 20 seconds mix well and allow it to reach room temperature.

* Step 3

In a bowl cut the white chocolate into cubes, add cream and with the help of double boiler method melt the chocolate till it’s lump free. Keep it aside to allow it to come to room temperature.

Wash, peel and cut mangoes into cubes. Put them in a blender along with cardamom powder and rose petals and blend it into a smooth paste.

Open the lid and add white chocolate, soaked chia seeds and gelatine and churn it once again.

Pour the mix into individual glasses and garnish with pistachios and dry rose petals.

Seal the glasses with cling film and refrigerate for 4-5 hours and serve chilled.

Cooking instructions

* Step 1

In a bowl add the coconut milk and chia seeds and keep it aside for half an hour.

* Step 2

Wash, peel and cut the mangoes into cubes and put them in a blender and make a smooth paste.

* Step 3

Add the mango paste into the bowl of coconut milk and chia seeds and give a nice mix.

* Step 4

Cover with lid and put it in the refrigerator for half an hour.

* Step 5

Take it out give another mix and put it in individual serving bowls and serve chilled.

2 tbsp

mango juice

1 cup

milk

200 ml

cream

1/4 th cup

sugar

3 tsp

gelatine

Cooking instructions

* Step 1

Wash, peel and cut 3 mangoes into cubes, put them in a blender, add cardamom powder and make a purée.

* Step 2

Take 1.5 tsp of gelatine and mix in 2 tbsp of mango juice and set aside for 10 minutes. Microwave it for 15-20 seconds and mix well. When it reaches room temperature add this into the mango purée and mix well.

* Step 3

Pour the mango purée in clear glasses upto half and cover with cling film and allow it to set in the refrigerator for 2-3 hours.

* Step 4

In a saucepan take milk, add sugar and switch on the flame and cook till sugar dissolves at sim but don't let the milk come to a boil.

* Step 5

Switch off the flame and add cream and mix well. Let it reach room temperature.

* Step 6

Take 2 tbsp of the milk mix and add 1.5 tsp gelatine into it... allow to rest for 10 minutes. Microwave for 15-20 seconds mix well and pour gelatine mix into the milk and cream mixture and stir well.

* Step 7

Add vanilla essence and mix well.

* Step 8

Take out the glasses and pour the milk cream mix into the glasses till 3/4th of the glass.

* Step 9

Cover with cling film and set it again for 3-4 hours.

* Step 10

Cut one mango into cubes and garnish the glasses with cubed mangoes and roasted pista and serve chilled.

Ingredient

1 packet

cream cheese

200 ml

thick cream

1.5 tsp

gelatine

3 tbsp

water

Cooking instructions

* Step 1

Break the digestive biscuits into chunks and add in the blender and make a fine powder.

* Step 2

Add this powder in a springfoam cake dish. Add the chilled butter and using your fingers mash the butter into the biscuit powder and spread evenly around the base of the pan and press it tightly.

* Step 3

Cover the pan with a cling film and put it in the refrigerator for 30 minutes to set.

* Step 4

Wash, peel and cut the mangoes into cubes and put them in a blender and make a purée. Take a tbsp of mango purée out in a bowl for garnish.

* Step 5

In a bowl add softened cream cheese with 1/4 cup of powdered sugar and beat with electric beater till it turns smooth.

* Step 6

Add chilled thick cream and beat further till you get soft peaks.

* Step 7

Add the mango purée into it and gently mix till everything gets incorporated.

* Step 8

In a small bowl add gelatine and water and let it set aside for 10 minutes.

* Step 9

In a microwave heat the gelatine mix for 10-15 seconds and mix well.

* Step 10

Once it reaches room temperature mix well and pour into the cake batter.

* Step 11

Gently mix again and now pour this mix over the digestive biscuit in the spring foam pan.

* Step 12

Pour a few drops of mango purée on top and with the help of a toothpick swirl it up to create a design.

* Step 13

Cover with cling film and refrigerate it overnight so that it sets well.

* Step 14

Open the spring foam and demould and serve.

oats

1/2 cup

brown sugar

2 tbsp

choco chips

2 tbsp

walnuts

Cooking instructions

* Step 1

Wash and chop the mangoes into cubes and evenly spread them in a baking dish.

* Step 2

Spread choco chips and walnuts over the mangoes.

* Step 3

In a bowl take all purpose flour, oats, butter, sugar, cinnamon and cardamom powder and with the help of fingers mash the butter into the flour till the flour take a crumbly texture just like bread crumbs.

* Step 4

Spread this crumbly mixture evenly over the mango in the baking dish.

* Step 5

Press gently and put it in a pre heated oven at 180 degree for about 15-20 minutes... or till the upper layer turns golden brown.

* Step 6

Serve it while it’s warm with a dollop of icecream.
