Valentine’s day is a celebration of romance and love in many countries around the world including Iran. This day is a Western festival but perhaps you may know, in Iran we celebrate it twice. Yes that’s right twice. The first one is on the 14th Feb based on western calendar and second one is on the 24th Feb.

Preheat the oven at 175c degree. Add melted butter, vegetable oil and sugar into a large bowl. Mix together until well combined and creamy.

Then add eggs to the butter mixture and whisk it well.

Next, add yogurt and rose water. Whisk it for 1 minute.

Then add, cardamom, baking powder, pinch of salt, plain flour, almond flour and semolina and mix together very well and make sure there are no lumps in the cake batter.

Grease sides of a cake tin, and cover the base of the tin with parchment paper. Pour the mixture into the cake tin and scatter over almond flakes. Place it into preheated oven and bake for about 45-50 minutes.

Meanwhile, prepare the syrup: add golden syrup or honey and lemon juice into a saucepan. Bring it too a boil. Then, reduce the heat and simmer the syrup for 5 minutes. Remove from the heat and add some dried fruits to the syrup and set aside.

Use a wooden skewer and Poke several small holes on the cake and pour syrup all over the cake.

Sprinkle with dried rose petals. Allow to soak for 1-2 hour and them remove from the cake tin. Cut the cake and serve it as it it is or with ice cream or whipped cream, taste is just perfect.

So first is first : we make the syrup: in a pot with sugar add water. Bring it to a boil. Allow to boil for 5 minutes. Now reduce the heat and add rose water or orange blossom. Allow to simmer for one more minute. Turn off the heat and set aside the syrup.

Now we prepare the batter for beautiful flower shape cookies: In a bowl mix flour with yeast, baking powder and sugar powder. Then add egg yolk, soft butter and vinegar. Combine the mixture with hands.

Next, pour lukewarm water and mix all ingredients together until you have a dough. Cover the dough with a towel and let to rest for 20 minutes.

After 20 minutes, divide the dough into two pieces. Then place one piece of the dough on a floured (corn flour) work surface. Take a rolling pin and flatten the dough.

For making a flower cookie we need to cut 3 large size, 1 medium size and 1 small size dough.

Once all dough cut off, now pick one large size of cut dough, brush the centre of dough with white egg, place second large size dough top of first one

And repeat the process with remaining of medium and small sizes cut dough.

Now, put one almond into the white egg and place it in the centre of flower (as you see in the photo).

Warm up the vegetable oil in a pot. No need to make it too hot. Place flowers into the warm oil and let to cook for 4 minutes then flip over to cook other side, until they are golden.

Take them out of oil, place on a kitchen paper towel, then soak into the syrup while they are hot yet.

In my previous posts i have shared my recipes for making different kinds of #baklava, and here is other one. I hope you make and enjoy it, they are so tasty.

Preheat the oven to 150C. For sugar syrup,add water, honey, lemon juice, sugar and cinnamon powder in a pot. Boil it for about 15-20 minutes until thicker the sugar.. Once its ready, let it cool.

Add cinnamon, cardamom, nutmeg, clove and sugar to the chopped nuts and mix together, and set aside. Lay one sheet of filo pastry on working table and brush with melted butter. Then, pinch the filo pastry lengthwise) as you see in the images). Spread chopped nuts on the filo pastry and fold it (as you see in the image).

Grease the baking tray and Place rolled pastry in the baking tray. Cut it into small square shapes. Brush with melted butter. Put the tray in the preheated oven and allow to bake for about 40- 45 minutes.

Once baklava is ready, Pour chilled sugar syrup over warm baklava and some nuts for topping. Let baklava set in sugar syrup for 5-6 hours and serve it.

This delightful syrup cake is a super moist cake with a delicate blend of cardamom and orange blossom.. A Perfect, light, sweet cake with soft texture.Sometimes it’s called baklava cake, perhaps due to lozenge cut of cake. I bet once you taste this cake, it would be your forever favourite one cake. For making syrup you might be use either rose water or orange blossom. I have tried with both of them and should tell, both are lovely.

Ingredient

3 cups (600 g)

plain flour

3 cups (600 g)

1 cup

milk

1 tbsp

cardamom

1/4 tsp

salt

1 cup (100 ml)

water

Preheat the oven to 175C. Grease baking tray with butter. Set aside.

Crack 5 eggs in mixer bowl. Add sugar and beat together until slightly fluffy.

Add 2tsp saffron water and butter. Combine together.

Then add cardamom, salt, 1tsp vanilla extract and ½ cup milk. Mix all well.

Add flour and baking powder to the egg mixture and combine all together for 2 minutes.

Finally add ½ cup of milk again.

Pour cake mixture in the baking tray. Now, to make the glazing top of the ckae, we need to crack last egg in a bowl. Add yogurt, 2 tsp saffron water, 1 tsp vanilla extract and mix well.

And spread the mixture top of the cake. Place it in the oven and bake it for 35-40 minutes.

While cake is baking, we prepare the syrup. In a pot with 100 ml water, add sugar, rose water or orange blossom, lemon juice and saffron water. Let it boil for 10 minutes, then turn off the heat and let it cool.

Once cake is ready, let it cool. Cut it into small pieces.

Zulbia is a kind of deep fried pastry with saffron sugar syrup. It’s a fantastic and super tasty sweet. It's similar to funnel cake as well. Zulbia has a crunchy, crispy texture. It is popular sweet in Iran, some African countries such as Algeria, Tunisia , Lybia, in Middle East countries and also in some of Asian countries. Zulbia has been mentioned in cooking book from 10th century. Zulbia is called in different ways: Zulbieh, Jalebi, Zelabia. It’s one of most favorite sweets in Iran during Ramadan. There are different recipes , in some of them there is not yogurt but using yogurt gives a nice crispy –glassy texture to the zulbia. Among the ingredient for saffron –sugar syrup, there is rose water. If you have no access to Rose water or perhaps you do not like it, you can use orange blossom instead.

First of all we prepare saffron sugar syrup. In a pot add water and sugar. Stir until sugar is dissolved. Then add saffron water, rose water and lemon juice. Simmer for about 10 minutes and set aside.

If you do not like rose water you can use orange blossom instead.

In a large bowl with corn flour, add yogurt and mix well.

Mix it thoroughly to get a lamp free batter.Cover the batter with plastic wrap and let to rest for an hour.

After an hour, add baking soda to the batter, mix well. Cover it with a plastic wrap and let to rest for 5-10 minutes.

Now you have a thin and runny batter.

Pour the batter into a squeeze bottle. Warm the oil on a high temperature. Now squeeze the bottle in order to pour some of the batter in hot oil.

Try to give ring shape to the batter and fry both sides.

Then, soak fried zulbia in the warm saffron syrup for 30 seconds.
