I occasionally crave colds Soba Noodles that I would eat with ‘Mentsuyu’, a Japanese noodle dipping sauce. My favourite go-to dish to enjoy with the cold Soba Noodles is Prawn, Onion & Carrot ‘Kakiage’ Tempura, but I reluctant to cook it just for my meal. This dish is quick and easy. Using already thinly sliced Beef, it takes 5 minutes to cook.

Ingredient

1/2 tablespoon

Soy Sauce

1/2 tablespoon

Mirin

1/2 teaspoon

Sugar

Cooking instructions

* Step 1

If you make ‘Mentsuyu’ (Noodle Dipping Sauce) just for this dish, try my Quick & Easy ‘Mentsuyu’. Combine the following ingredients in a heat-proof bowl and microwave until it boils, then cool. • 50ml Water • 1/8 teaspoon Dashi Powder *’Katsuo’ (Bonito) type • 3 teaspoons (15ml) Soy Sauce • 2 teaspoons (10ml) Mirin

* Step 2

Combine all the Sauce ingredients in a small bowl. Heat Oil in a small frying pan over medium high heat, cook thinly sliced Beef, add the Sauce, and cook until the sauce thickens.

* Step 3

Cook Soba Noodles according to the instruction. I cooked Dry Soba Noodles in boiling water for 4 minutes. *Note: DO NOT add Salt to the water.

* Step 4

Drain Soba Noodles, rinse under cold water, then drain well.

* Step 5

Place the Soba Noodles in a serving bowl, pour some ‘Mentsuyu’ sauce, cover with Beef, add Egg and Spring Onion, and enjoy. *Note: I added some Crispy Chilli Oil.

‘Gyū Don’ is one of Japan’s most popular rice bowl dishes. In Melbourne where I live, since local supermarkets started selling thinly sliced Beef, it has become easy for me to cook Gyū Don. I don’t need to start the cooking process with slicing Beef. Today I cooked it in a different flavour. This is a Taiwanese inspired Gyū Don. I added Star Anise and Chinese Five Spice.

Ingredient

1 tablespoon

Sugar

1 tablespoon

Mirin

1/2-1 teaspoon

Chinese Five Spice

Cooking instructions

* Step 1

Heat the Sauce ingredients in a sauce pan over a medium heat, add Onion and Ginger, and bring to the boil.

* Step 2

When it’s boiling, scatter Beef on top the Onion, cover with a lid, and cook until Onion is soft.

* Step 3

Make some room to add Harusame (Bean Thread Noodles) into the sauce, and cook until the noodles turn transparent.

* Step 4

Half fill a bowl with warm cooked rice and cover it with the Beef mixture, and enjoy. Today I added Boiled Egg.

‘Instant Ramen Noodles’ is a complete package that comes with Dry Noodles and Seasoning Powder, often with Spices and Flavoured Oil as well. Using the Noodles and Seasoning Powder, I cooked this stir-fry today. As the dish smelled so good, I took this photo in case I would want to share how I cooked it. Well… it was not bad at all. This is how I cooked it.

Ingredient

1 teaspoon

Sesame Oil

1 teaspoon

Sugar

Cooking instructions

* Step 1

Prepare Beef and Vegetables.

* Step 2

Heat Oil in a frying pan over medium heat, cook Beef, Garlic and Vegetables. When Vegetables are cooked, add Sugar, Toban Djan (Chilli Bean Sauce) and 2 teaspoons Seasoning Powder that is included in the package.

* Step 3

*Note: Alter the amount of Seasoning Powder, Sugar and Toban Djan to suit your taste. 1/2 teaspoon grated Ginger would be a good addition.

* Step 4

Meanwhile, cook Ramen Noodles in boiling water until soft. Drain and add to the pan, and stir to combine.

* Step 5

Sprinkle with some Toasted Sesame Seeds and enjoy.

Super thinly sliced Beef, that is available from many Asian grocery stores and some supermarkets, is very convenient to use. Today I wanted to cook Beef Stroganoff for my lunch, but I didn’t have Sour Cream. This is what I ended up making, but it was really yummy.

Ingredient

1/4

Onion

1/2 tablespoon

Plain Flour

Cooking instructions

* Step 1

Melt Butter (OR heat Oil) in a frying pan over medium heat, cook Onion, Garlic and Mushrooms for a few minutes, then add Beef.

* Step 2

When Beef changes colour, it won’t take long, season lightly with Salt & Black Pepper, add Flour, and stir. *Note: You can add a small amount of Paprika if you have it.

* Step 3

Add Beef Stock and stir. When the sauce thickens, add Cream, and add extra Salt as required.

* Step 4

Half fill a bowl with warm Cooked Rice and cover it with the Beef mixture, sprinkle with some finely chopped Parsley and extra Black Pepper.

Stir-fried Somen (OR Capellini) with Beef, Spinach & Egg

Somen is the thinnest Japanese noodles. Sir-fried Somen is a quick and easy dish, and it is very popular. However, Somen can be difficult to find if you live outside Japan. For stir-fried Somen dishes, I have found Italian Pasta ‘Capellini’ (Angel Hair Pasta) is a great substitute and it actually works better.

Ingredient

1 teaspoon

Sesame Oil

1/2 tablespoon

Oil *I used Canola Oil

1-2 handfuls

Baby Spinach

1 tablespoon

Oyster Sauce

1 teaspoon

Soy Sauce

Cooking instructions

* Step 1

Combine all the sauce ingredients in a small bowl.

* Step 2

Cook Somen (OR Capellini) until firmly cooked, and drain. Do not add Salt to water when you cook Somen as Somen is already salted. If you use Capellini, you need to cook it in salted water.

* Step 3

*Note: I recommend to rinse Somen to remove starch, then drain well. Sprinkle with 1 teaspoon Sesame Oil and mix to combine.

* Step 4

Heat Oil in a frying pan over medium heat, cook Egg into soft scrambled, and transfer to the bowl that you used to whisk the Egg.

* Step 5

Add an extra small amount Oil to the pan and cook Garlic. When aromatic, add Beef. When Beef changed colour, lightly season with a pinch of Salt & Pepper (OR Ground Chilli), then add Spinach and the Sauce, and stir. Finally add Somen (OR Capellini) and stir to combine.
