This is a great recipe for extremely delicious gigantes (giant beans) in the oven!!

Ingredient

1 clove

Cooking instructions

* Step 1

Soak the beans overnight (if you want you can add a little baking soda).

* Step 2

Boil them on the next day until tender, discarding the first batch of water that you boil them in.

* Step 3

Once they are tender add the finely chopped onion, garlic and peppers, the carrot slices, the bay leaves and allow them to boil for a while.

* Step 4

Then add the tomato (both the grated and the tomato paste), allow it to boil for a couple of minutes and finally add the olive oil, the dill, the parsley and the spices.

* Step 5

Empty in a pyrex baking tray and bake at 160°C for about 1 to 1 1/2 hour, until the beans have absorbed most of the liquids.

This gigantes (giant beans) recipe is the original that my grandmother used to make and we all licked our fingers!!!!! It is worth trying!

Ingredient

1 tbsp

sugar

1 clove

garlic

2 tsp

salt

Cooking instructions

* Step 1

Boil the giant beans in a pressure cooker for 30' minutes.

* Step 2

Meanwhile, blend the tomatoes, sugar, garlic and onions in a blender and when you have a mixture of smooth consistency add it to the pot together with the tomato sauce, the parsley, the carrots, the salt, the pepper, the bay leaves and the olive oil.

* Step 3

When the beans have boiled place them in a Dutch oven and add a cup of the water that they have boiled in.

* Step 4

Add the sauce that you have already prepared to the Dutch oven and mix.

* Step 5

Put the lid on and bake for 1 1/2 hour at 160°C. Remove the lid for the last 10' of baking and add the breadcrumbs.

Cooking instructions

* Step 1

Boil the giant beans that you have already soaked overnight, for 20 minutes in a pressure cooker or for at least an hour in a normal pot.

* Step 2

Meanwhile, you have already boiled the spinach (or defrosted it if you use frozen spinach) and place it in a small pot with quite a bit of olive oil, the finely chopped onions, the oregano and the finely chopped tomato. Let everything boil together for a little while.

* Step 3

When the giant beans are ready place them in a baking tray, add the spinach on top, mix if you like and adding a little bit of additional olive oil, place it in the oven for about an hour more.

* Step 4

It is great if you crumble a bit of feta cheese on top about twenty minutes before the food is done and place it back in the oven.

I cooked this today,  7/7/2009. Guys, be sure to make it, it is divine!

Ingredient

1 packet

giant beans

1 tsp

sugar

1 tsp

ketchup

1 cup

red wine

Cooking instructions

* Step 1

Wash the beans and soak them overnight. In the morning boil them in plenty of water until they are tender and you can pierce them with a fork. If you are using a pressure cooker, boil for 50’.

* Step 2

Strain the beans and sauté in olive oil with the onion, garlic, peppers, eggplants and sausage.

* Step 3

Deglaze with wine and add the tomato, sugar, tomato paste, ketchup and parsley.

* Step 4

Let it boil for a couple of minutes, stir, and empty in an earthenware pot.

* Step 5

Dissolve the vegetable stock cubes in a cup of warm water and pour over the beans.

* Step 6

You don't need to add more salt since you add the vegetable stock cubes plus the sausages will let out their salt.

* Step 7

Bake at 200°C for about 30-40 minutes (depending on your oven).

* Step 8

When it is ready, cover the beans with the breadcrumbs, the parsley and sprinkle with freshly ground white or green pepper and a bit of oregano.

* Step 9

Turn off the oven and leave the food in for about 10 more extra minutes.

There are no words to describe them.... simply perfect!

Ingredient

1/2 kg

giant beans

1/2 cup

olive oil

2 tsp

sugar

Cooking instructions

* Step 1

Soak the beans overnight in plenty of water.

The next day, strain and boil in a pressure cooker with plenty of water.

From the time the pressure cooker's valve starts to let steam off let cook for about 1 hour so that they boil and get tender.

Remove the beans from the pressure cooker and strain. Let them stand in a bowl.

* Step 5

Put the onions, carrots, celery (together with the sprigs, finely chopped), the tomato, the olive oil, the sugar, salt, pepper, vegetable stock cubes and about 1 litre of water in the same pressure cooker.

Close the pressure cooker and boil the vegetables for about 15 minutes (after the valve starts releasing steam).

Put some olive oil in a frying pan and sauté the sausages.

Heat the oven at 180 degrees.

Put the giant beans in a deep oven tray, the vegetables and the sausages with their oil on top.

Stir all the ingredients well.

Place the tray in the oven and bake for about 1 hour till all the sauce is absorbed.

Stir the food a couple of times while baking. Serve with crumbled feta on top and hot fresh bread!
