Hainan chicken rice cooked in Staub pot ๐Ÿ“ "So shiok!" ๐Ÿ˜‹๐Ÿ‡ธ๐Ÿ‡ฌ

Having lived in Singapore for around 10 years, Hainan chicken rice is one of my most favorite dishes of all! โค๏ธ

Cooking instructions

* Step 1

Rinse the rice until the water is clear. Soak in the clear water for 30 mins to make the rice soft. After 30 mins, drain the water using a strainer.

* Step 2

Poke the chicken with a folk to tenderize the meat. Sprinkle salt, pepper and sugar. Leave it for 5-10 mins.

* Step 3

Add rice, 380cc of water, chicken and all the other ingredients written under the rice preparation.

* Step 4

Cook in a medium heat. Once it boils, cover the pot with a lid and โ€œcook under the low heat for 13 minsโ€(please use a timer). After that, stop the heat and let it steam for 15 mins.

Now the rice and chicken are ready!!

Cut all the vegetables and place them on a plate. Mix all the ingredients for โ€œDipping sauce 1โ€ to make a soy sauce based sauce. Prepare chili sauce too. Serve the chicken, rice and decorate with coriander leaves. Enjoy!!
