Baci di Dama (Italian Hazelnut Cookies)
Baci di Dama means "Lady's kisses" in Italian. It actually takes some time to make them, but I'm sure you will never fail making them with my recipe!

Cooking instructions
* Step 1
Measure all the ingredients at the beginning.(When it comes to baking, accuracy is very important!) Leave the butter at room temperature and keep it soft.
* Step 2
Start from making a plain dough. Firstly, put the butter in a bowl. Mix it well until it becomes like a cream and then add powdered sugar. Mix well again until you cannot see the sugar. Add pinch of salt.
* Step 3
Sieve the flour, the almond flour and mix them with the butter. Fold the cookie dough and use a rubber spatula in a cutting motion.
* Step 4
Use hands to hold the dough together and make it into a square shape. Next, make a cocoa dough. It’s exactly the same steps but sieve the cocoa powder together with the flour and the almond flour. Then, rest these two colors of dough in the refrigerator for 1 hour.
* Step 5
After 1 hour, measure the dough to become 3g each. Keep measuring for 61 balls of cookies. Arrange them on a baking tray. Preheat the oven to a temperature of 160 degrees.
* Step 6
Bake them for 15 minutes. Once they are baked, let the cookies cool.
* Step 7
Pour boiled hot water in a small bowl, place another bowl with chopped dark chocolate on it and melt it. Apply small amount of chocolate into each pair of cookies and press them together.
* Step 8
Same as step 7 for the ruby chocolate too. Cool them in a refrigerator to allow the chocolate to set.
