Lemon-Pepper Chickpea Fattoush

Lemon-Pepper Chickpea Fattoush

I'm obsessed with this salad! ❤ Its bright and fresh and unbelievably filling.

Ingredient

Food ration :

2 servings

Cooking time :

5-10 minutes
1/3 C.

Olive oil

1/2 tsp.

Lemon-pepper

1/4 tsp.

Salt

1/2 can

chickpeas

Cooking instructions

* Step 1

Preheat oven to 400°F.

* Step 2

Mix lemon juice, olive oil, salt and lemon-pepper in small bowl.

* Step 3

Place torn pita pieces on a cookie sheet in even layer. Drizzle with 3 Tbsp. of the dressing. Toss to coat. Place in oven until browned and crisp. About 5 minutes.

* Step 4

Place chickpeas, tomato and cucumber in remaining dressing.

* Step 5

Arrange chopped salad on 2 plates and top with chickpeas, tomato and cucumber dressing mixture evenly.

* Step 6

Sprinkle toasted pita pieces between dishes and toss to coat.
